SMOKED LAKE TROUT BRINE

1/2 Cup Morton Tender Quick Salt
1/2 Cup Brown Sugar
1/8 Cup White Sugar
1 Quart Cold Water
2 Tsp. Vanilla

Brine 8-10 hours. Drain, then pat dry. Dry 1-2 hours to form pectin. Smoke accordingly.
